So What's Lechon Kawali?
Lechon kawali or Pan-roasted pork is a variation of the traditional Lechon Dish. Crispy and tender , it's a dish that is well known in the Philippines. While the traditional lechon is cooked in charcoal, the Lechon kawali on the other hand is cooked by boiling , this process makes the meat tender , and then later on deep fried so that the skin of the pig get crispy and crunchy. The most common part of the pig that is usually used is the pork belly because it has the perfect combination of the fat and the meat of this area. This dish is also great for pulutan (appetizer) accompanied by lechon sauce but i really recommend soy-sauce with chopped onions as dipping. Easy Lechon Kawali Cooking Tutorial & Recipe |
Ingredients Needed:
- 2 lbs pork belly
- 3-4 cups cooking Oil
- 2 tablespoons salt
- 5 pieces dried bay leaves
- 2 tablespoons whole pepper corn
- 34 ounces Water
Step by Step Cooking Procedures:
1. Put water on a big cooking pot and bring to a boil.
2. After it Boils ,Put in the pork belly then add 1 tablespoon of salt, pepper, and bay leaves and let it simmer for approximately 30 minutes or until meat gets tender. You can use a spatula to check if it's tender.
3. Remove the meat from the pot and cool it down for about 5 to 10 minutes.
4. Spread & Rub 1 tablespoon of salt on the meat, make sure to distribute it evenly on all parts of the meat. Rub it on all areas evenly.
5. We are now ready to deep fry the meat. Place the cooking oil on a dry cooking pot and heat it up.
6. When the cooking oil is hot enough, put the meat in the cooking pot and let it cook until the immersed side gets brown and the texture gets crispy.
7. When the immersed side is cooked .Flip the meat to cook all sides of the meat evenly.
8. After we remove the meat from the pan, Cool it down a little bit then chop the meat according to desired portions.
9. Serve and Enjoy!
