It may be baked or unbaked . What we need:
Equipments:
- cheesecake pan - 8 inches in diameter
- baking paper
- measuring jug/pitcher
- rubber spatula
- oven set to 200 and 350 degrees Fahrenheit
- baking gloves/asbestos
- baking pan
Ingredients:
- cream cheese (any brand but i prefer Kraft Philadelphia) - 300 grams. (12 pieces)
- sugar white - 1 kilo
- cornstarch - 100 grams
- salt - pinch only
- lemon - 1 piece grate the skin for zest then squeeze it for a sour taste for the cheesecake.
- eggs - 1/2 quart whole, 1/2 quart egg yolk only (total of 1 quarts)
- whipping cream - 200 ml.
- milk - 500 ml.
- digestive biscuits - 1.6 kg. - for the crust of the cheese cake.
- butter - 200 - 400 grams
- vanilla - 3/4 oz.
Step by Step Cooking Procedures:
1. Cut the baking paper into a circle and make sure it fits the bottom of the cheesecake pan. The paper helps the crust to not stick onto the bottom of the pan.
2. Melt the butter.
3. Digestive biscuits should crushed into fine grains there should be no lumps. This ensures the crust stability.
4. After melting the butter mix it to the crushed digestive biscuits
and mix well.
5. Form the crust from the sides and at the bottom and make sure it forms evenly and there is no gaps or holes then bake it for 5 minutes under 350 degrees Fahrenheit.
6. After the crust is baked let it cool down for a while and prepare the cheesecake mix.
7. Put all of the cream cheese on the mixing bowl then put the sugar, salt, cornstarch, pinch of salt and the zest and squeezed lemon.
8. Mix for 1 minute - speed 1, scrape the sides and the bottom of the mixing bowl then mix for 2 minutes at speed 2.Scrape again.
9. Measure the whipping cream and milk together on a measuring cup. Pour the mixed whipping cream and milk while running the mixer on low speed for 1 minute then after 1 minute scrape again the sides and bottom then mix at high speed for 2 minutes.
10. Prepare the eggs mix the 1/2 quart whole and 1/2 quart egg yolk in the measuring pitcher or jug and mix the vanilla with the eggs.
11. Pour the eggs using the same speed i mentioned earlier. don't forget to scrape.
12. After finished mixing the ingredients together. pour it on the cooled crust and make sure it is distributed equally. Then bake it for 3 hours under 200 degrees Fahrenheit.
13. After baking for 3 hours cool it down and then and put it on the refrigerator for 24 hours. After 24 hours it will become hard and will be ready to eat.
14 Optional toppings for the cheesecake: strawberry, blueberry, chocolate and German chocolate.
