In this article I will teach you how to cook Pinoy Chicken Adobo easily. But first what is Pinoy Chicken Adobo ?

The Pinoy Chicken Adobo is an authentic Filipino dish that is truly unique and one of a kind. Famous for its zingy taste and powerful aroma. This Pinoy Chicken Adobo Recipe is the simplest  recipe you can find . Not to be mistaken with Mexican adobo, this dish is unique because it is prepared by stewing chicken in vinegar and soy sauce. Also this dish is best serve with hot rice.

Several sources who are experts in Asian food history say that the Filipinos were already cooking adobo even before the Spaniards colonized the country. The cooking method is termed as “inadobo” which is the very same method in this Pinoy Chicken Adobo Recipe. It is also believed that cooking with vinegar preserves the meat. This method is also highly considered as one of the earliest food preservation practice in the world.

Pinoy Chicken Adobo Recipe and Tutorial

Follow This Easy Steps:


Ingredients :

  • 2 lbs chicken, cut into small pieces (serving pieces)
  • 2 tablespoons vinegar
  • 4 tablespoons soy sauce
  • 3-4 pieces dried bay leaves
  • 1/2 tablespoon white sugar
  • 1-2 cups water
  • 3 cloves garlic, (crushed)
  • 1/4 cup cooking oil
  • whole peppercorn (paminta)
  • Salt


Step by Step Cooking Procedure :


1. In a large container, combine the garlic and soy sauce then place the chicken in the container and marinade the chicken for at least 3 to 4 hours.
2. Place the cooking oil in a pan and apply heat. When the oil is hot enough, put-in the marinated chicken. Cook all the sides for about 5 minutes.
3. Pour-in the remaining marinade and add 1-2 cups of water. Bring to a boil .
4. Add the dried bay leaves and whole peppercorn (paminta) . Let it simmer for about 30 minutes or until the chicken is tender.
5. Add vinegar. Stir and cook for about 10 minutes.
6. Then put- in the sugar, and salt. Stir and turn the heat off
7. Best serve when hot. Share and Enjoy!
