Ingredients :


  • 1 whole chicken, cut into serving pieces
  • 1 thumb ginger, cut into strips
  • 1/2 piece small green papaya, cut into small wedges (or you can use chayote)
  • 1 tablespoon garlic, minced
  • 36 ounces rice washing(hugas bigas)
  • 1 medium sized onion, chopped
  • Fresh hot pepper leaves
  • 2 tablespoons fish sauce


Step by Step Cooking Procedure :

1. Sauté the garlic, onion, and ginger.
2. Put-in the chicken and cook until color turns light brown.
3. Add the fish sauce and mix all the ingredients well.
4. Carefully pour the rice washing and put to a boil. Simmer for about 45 minutes.
5. Add the green papaya wedges and let it simmer for about 5 minutes.
6. Add the fresh hot pepper leaves.
7. Add salt and pepper then taste.
8. Best served when hot. Share and enjoy!
